THE FARM
In 1978 Di Gaetano Michele and Bianchi Marina, husband and wife, after almost 25 years dedicated to their previous employment, a beauty salon managed with success in San Babila Square in the centre of Milan, decide to change life and after going round the Italian peninsula, they stop in the area of Bolgheri, buying the first olive grove and building the home where they will come to live with their sons Paolo and Simone, in that time very little.
Since then and as the sons were growing up, their farm began to take shape: it was built the main house, were re-established the first hectares of olive trees which were unfortunately deserted and were bought and planted other ones. Afterwards was built the farm oil mill for olives pressing.
THE FARM’S PHILOSOPHY
Fonte di Foiano devotes itself since its birth to the production of Extra Virgin Olive Oil.
It has always reinvested all its resources to improve work’s quality and products, trying to combine the modernity of new technologies, in particular the pressing system, with old traditions, as for example manual picking and pruning.

Fonte di Foiano is now completely managed by the sons since their definite entrance in the farm management in 1997. The farm stands out in the wide olive survey of Bolgheri area for the value it has been able to give to the product and to the capacity to have a complete production system. Every process is made inside the farm itself: picking, pressing, bottling.
Lost of investments have been done, from oil mill modernization to millstones and presses with a 2 phase integral system, which allows an absolute control on product quality and hygiene, to the system of automatic bottling where oil passes from the cisterns to the bottles without any external manipulation which could compromise hygiene and quality.
